Strawberry Cheesecake Bars

Five years ago… when they were small.

So you are craving cheesecake but do not want to make a whole cheesecake because it’s hot, and it seems like even a thin slice might feel too burdensome.

What if you could make a smaller version? Well maybe not necessarily smaller, but a version to share with all of your friends.

That’s where the bar steps in.

Bars are lovely because you can cut them any size you like.

Now even though you will cut your bar small, you may realize you have discovered heaven in a bite and feel the need to relive that sensation immediately… I’m here to tell you… that’s okay. So long as you share this deliciousness with lots of other people.

Oven 350 degrees, grease a 9″x13″ pan then place parchment on the bottom and grease it as well. Make the parchment wider than the pan so you have flaps that assist with taking the bars out of the pan later.


  • 10 Tbs. butter (melted)
  • 16 graham crackers
  • 2 Tbs. sugar

Place ingredients into the bowl of a food processor. Mix ingredients together until graham crackers are in crumbs and the mixture is becoming one unit. Then press it evenly into the bottom of the pan, and bake in the oven for 8-10 minutes, until the crust is browning a bit on edges.


  • 1 – 1 1/2 cup strawberries chopped into about 1/4″ pieces
  • 1 Tbs. sugar

Place in bowl and let macerate while you create the rest of the filling.

  • 2 lbs. cream cheese (room temperature)
  • 4 eggs (room temperature)
  • 1 cup sugar
  • 1 Tbs. fresh lemon juice
  • 2 tsp. vanilla

Place ingredients in a food processor with a metal blade. After running for about 30 seconds, use a rubber spatula to scrape sides and bottom and then let it run again until fully combined.

Spread out half of the strawberries on the graham cracker crust. Pour the cream cheese mixture over the top. Pour the remainder of the strawberries on top. Then use a butter knife or spoon and move around the berries to marbelize the top and spread them evenly.

Bake for 45-55 minutes.

Cool on counter and then Let cool overnight in the fridge.

Cut into desired squares or rectangles.
